Sweet potato pizza… the healthy Saturday night in for all the family!

Fancy a pizza night? I definitely did last night but managed to resist when I saw this sweet potato pizza recipe. A new (for me), and healthy way to make a pizza for the whole family, with plenty of veg thrown in. It was really delicious that I just had to share the recipe with you. I found the base recipe online and then made my own toppings. So this recipe is for my version, however you can change the toppings to your preferences.

Ingredients for pizza base

  • 1 large sweet potato
  • 80g oat flour (oats blitzed in a processor will do – this is what I did)
  • 1 egg
  • 1 tbsp olive oil

Pizza topping ingredients

  • Tomato puree (I used this but you can buy pizza sauce also)
  • 3 large mushrooms
  • 1 large tomato
  • Handful of spinach
  • Cheese (you can buy vegan-friendly cheese if desired – although this isn’t a vegan recipe)
  • Garlic
  • Mixed herbs

How to make a sweet potato pizza

Step 1: Boil, microwave or bake your sweet potato until cooked. Take the skin off and put into a large bowl and mash.

Step 2: Blitz the oats in a processor to make an oat flour. Add this, the egg and olive oil to your sweet potato and mix.

Step 3: On a lined baking sheet, put your sweet potato mix (I made 1 large pizza but you could make probably six small pizzas from this recipe depending on their size). Make the mixture about 0.5cm thick. Put in the oven at 200 degrees for 20-25 minutes.

Step 4: Once cooked, take out and add your tomato base. I added tomato puree as was the only thing we had in the cupboards. This can go all the way to the edges to prevent burning of the sweet potato – taking away the need for crusts.

Step 5: Fry your mushrooms in herbs and garlic. Add to the pizza. Add the rest of your toppings – for me that was a sliced tomato, chopped spinach and topped with grated cheese.

Step 6: Put back in the oven for a further 5-10 minutes. For me I like the cheese more melted so I cooked it for 10 minutes.

Step 7: Take out of the oven and cut into pieces. I served it with a lovely fresh salad and some Rubies in the Rubble chilli mayo and banana ketchup.

A salad I really love is this Panzanella Salad made with tomatoes, red onions, peppers and basil – it’s not one I teamed in this particular photo, but it is really tasty if you are looking for a less leafy green salad. Definitely one to give a try if you would like to switch up your salad game!


A great healthy vegetarian meal for all the family

For me it’s fantastic now my son is eating more solid foods, so last night we ate much earlier so we could all have dinner together, eating the same foods. My son loved this, as did my husband and I, so it will be definitely one we try again soon.

Experiment with the toppings

This recipe lends itself to using up whatever is in your fridge and cupboards – go wild and experiment with the toppings!

If you have older children, let them help with the toppings so it’s a fun one to make together and they can feel they are making the dinner with you.
