Mmm! Sugar-free pancake recipe by Nom Nom Kids you need to try

I’ve been focussing on weaning a lot the past couple of weeks, with my son who is almost 9 months now and starting to really get a great grasp of foods. He is starting to get to that point where he is enjoying exploring the finger foods more than the puree and so I need to get on advancing my cooking skills pronto!!

One recipe that popped up on my Instagram feed recently was the Nom Nom Kids sugar-free pancake recipe. I just happened to have the ingredients in the cupboards and fridge so thought I’d give it a go, and oh-my-goodness am I glad I did! My son loves these, they are sugar-free, easy for him to eat with just 2 teeth and can be easily teamed with different sauces, fruits or yoghurt. Here’s the Nom Nom Kids recipe which you can also find here on their website. I have adapted it to what ingredients I used but check out the original recipe for their full ingredient list.

Ingredients you’ll need

  • 1 egg
  • 110g self-raising flour
  • 75g Greek yoghurt (you could use natural yoghurt also)
  • 75ml milk (I used Califia Farms oat milk)
  • 1tsp Chia seeds
  • Drizzle of oil / knob of butter for frying

It depends on the size of your pancakes – I like them smaller and this tends to make 6-8 pancakes for me.

How to make these light, fluffy pancakes

Step 1: Mix all the ingredients into the bowl (apart from the oil or butter of course as this is just for frying). Whisk up nicely so the mixture is well mixed.

Step 2: Make your frying pan nice and hot, add the oil or butter and pop a spoonful of mixture into the pan. I tend to do 3 pancakes at once in one medium sized pan. Up to you how big or small you want the pancakes to be.

Step 3: I’d say they need about 2 minutes on each side so are lightly browned on either side. You’ll see they start to bubble on the top and sides – this is how you’ll know they are good to flip over.

Step 4: Take off the heat and leave to cool, particularly before giving to your children. Taste delicious with peanut butter, fresh fruit and yoghurt.

Step 5: Easy to store in a Nom Nom Kids snack pouch, and they can be kept in the fridge. Trust me, they are so delicious there’s no point in freezing them as they’ll be gone before you know it!

The perfect eco-friendly snack bag

I came across Nom Nom Kids on Instagram actually and with no solution to a classic sandwich bag I decided to order these snack bags. I have the beeswax wraps but when there are a lot of snacks they just don’t seem to do the job – you need more of a bag.

The Nom Nom Kids snack bags are big enough to store fruit, leak-proof so you could even store some delicious pear rice pudding, or keep sandwiches and these delicious pancakes in, so you can keep them in the fridge. The bags are freezer-proof and actually dishwasher proof also so are easily cleaned if you are a busy parent like me and just need to pop them in the dishwasher for a proper clean.

What I liked about Nom Nom Kids is the fact that I know from hearing from my friends it gets harder to keep getting your little ones to eat fruit and veggies. I think these snack pouches are really fun with the monster face on one side. So I’m hoping my son will like to get the snacks out of these himself, and I can make them in advance to store in the fridge too, so it will hopefully be a win-win!

For me it’s a no brainer, I’m reducing my plastic consumption and supporting another small UK business.
